FWIW, in my limited experience I like the BlueSCSI.  Physically the 
SCSIknife looks nice, but counting the pins on between the two boards 
makes me think it is narrow only.  That is fine for a lot of machines, 
but BlueSCSI can be gotten in a versions that support Ultra and Ultra-Wide.

All three projects (ZuluSCSI, BlueSCSI, and SCSIknife) do seem to share 
forks and patches from each other, and all three seem to have ended up 
moving the the RP2040 or RP2350 chips, so I suspect that significant 
differences between them tend to end up being temporary, unless there 
are quality differences in the routing like one other commenter suggested.
