Are you willing to share MIME related headers from the test email?

    % fgrep -i mime test.eml
    MIME-Version: 1.0
    This is a cryptographically signed message in MIME format.
    Content-Type: application/pkcs7-signature; name="smime.p7s"
    Content-Disposition: attachment; filename="smime.p7s"
    Content-Description: S/MIME Cryptographic Signature

I wonder why the openssl smime command didn't see sufficient information 
to read the smime.p7s information.
