[rescue] Filesystem choice for fileserver?

It seems that swapping one grub for another should be easy.   Just  
drop the new grub files in the proper place in /boot, then run grub- 
install with appropriate arguments.

This assumes that when you say a lot of grubs you don't really mean  
all grubs.
