Or don't use dfstab ?
Set the nfs options you need using 'zfs sharenfs="whatever"'.
The options I use myself on one filesystem :-
# zfs get sharenfs rpool/nethome
NAME           PROPERTY
VALUE                                                    SOURCE
rpool/nethome  sharenfs
rw=dengue.inside.zonky.org,root=dengue.inside.zonky.org  local
No problems with root fiddling with that filesystem mounted elsewhere.
